Bread and Dips

Arayes is a pita or flatbread that has the stuffing of raw seasoned meat kofta fillings, which are pan-fried or grilled. You can have them with the sourdough (bread). You can also try this raw kingfish dish at Gerard’s. The firm slices of fish are enveloped with semi-dried and chopped eggplant with a garlicky yoghurt sauce on the outside. Another must-try is the wood-smoked Australian mussels with green muhammara (a smoky Middle Eastern dip) and blackened eggplant baba ghanoush with parsley oil.
